¿What is Raicilla?

Raicilla is an artisanal agave spirit originating from the state of Jalisco, Mexico.

More than a category, it is a practice sustained over time:

in the knowledge of those who produce it,
in its relationship with the territory,
and in processes that respect its natural rhythm.

An associated project

Monte Marea is a collaboration with master raicilla producers from the Sierra and western coast of Jalisco.

It emerges from a deep respect for the people and the ecosystem that sustain tradition and a way of life in harmony with nature.

Master raicilla producer

Domitila has been distilling wild Agave maximiliana for 46 years. Her method is ancestral, and she is one of the few women—counted on the fingers of one hand—recognized as a master raicilla producer from the Sierra and western coast of Jalisco.

Her work sustains not only production, but also a way of relating to the craft and to her community.

Production is small-scale.

Each batch is developed in sync with the phases of the moon and the natural rhythm of the territory.

Tasting Notes

appearance

Bright, pristine, and platinum in tone.

nose

Floral and herbal, with prominent basil notes, along with hints of guava, pink pepper, salt, mesquite, and a distinctive petrichor sensation.

palate

Balanced and complex, with a light astringency and pleasant acidity. Silky texture and a gentle expression. Notes of pine, fresh rosemary, nopal cactus paddle, tamarind, sour orange, and wildflowers.

Abocado

Macerated over a lunar cycle in glass demijohns under controlled light and temperature, this infusion is a contemporary convergence of ancestral knowledge: agave, cacao, and vanilla—three endemic species of great biocultural importance in Mexico.

Maximiliana 1888 is inspired by a 19th-century recipe. Macerated and then redistilled, it is a contemporary convergence of ancestral knowledge: agave, cacao, and vanilla—three endemic species of great biocultural importance in Mexico.

Tasting Notes

appearance

Bright, pristine, platinum-toned.

nose

Bright, playful aromatics with a pronounced alcoholic presence, quickly followed by aromas of herbs, cacao, and sourdough bread. The aroma evolves in the glass with time and air.

Palate

Ripe agave with a round, slightly sweet texture. A warm mouthfeel that leans toward spices and herbs. A subtle saline note supported by gentle sweetness and delicate cacao seed nuances.
