¿What is Raicilla?
Raicilla is an artisanal agave spirit originating from the state of Jalisco, Mexico.
More than a category, it is a practice sustained over time:
in the knowledge of those who produce it,
in its relationship with the territory,
and in processes that respect its natural rhythm.
An associated projectMonte Marea is a collaboration with master raicilla producers from the Sierra and western coast of Jalisco.
It emerges from a deep respect for the people and the ecosystem that sustain tradition and a way of life in harmony with nature.
Domitila Anaya Topete
Master raicilla producerDomitila has been distilling wild Agave maximiliana for 46 years. Her method is ancestral, and she is one of the few women—counted on the fingers of one hand—recognized as a master raicilla producer from the Sierra and western coast of Jalisco.
Her work sustains not only production, but also a way of relating to the craft and to her community.
at its own paceProduction is small-scale.
Each batch is developed in sync with the phases of the moon and the natural rhythm of the territory.
From agave to Spirit
The process maintains a direct relationship with the raw material and its environment, combining ancestral techniques with careful decision-making.

From the agave, the soil, the climate, and the moment in which it was produced.
It does not seek to be repeated,
